Ingredients
  

  • 2 pounds Yukon Gold or Carisma potatoes
  • Olive oil spray
  • 3 tablespoons butter melted
  • 4 garlic cloves crushed
  • 1 tablespoon fresh parsley chopped
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons parmesan cheese

Instructions
 

  • Preheat your oven to broil or grill at medium-high heat, approximately 400°F (200°C).
  • Place the potatoes in a large pot and cover them with salted water. Bring the water to a boil and cook the potatoes for 30 to 35 minutes until they become fork-tender.
  • Drain the potatoes well and allow them to cool slightly so they are easier to handle.
  • Lightly grease a large baking sheet with olive oil spray to prevent sticking and to help the potatoes crisp.
  • Arrange the cooked potatoes on the baking sheet. Using a potato masher or the bottom of a glass, gently press each potato until it flattens slightly while still holding its shape.
  • In a small bowl, combine the melted butter, crushed garlic, and chopped parsley. Mix well to create the garlic butter mixture.
  • Spoon the garlic butter mixture evenly over each smashed potato so the flavor spreads across the surface.
  • Season the potatoes with salt and black pepper. Lightly spray the tops with olive oil to encourage a crispy finish.
  • Place the tray in the oven and broil the potatoes for about 10 to 15 minutes until the edges become golden and crispy. This step creates the signature texture of Crispy Garlic Butter Parmesan Smashed Potatoes.
  • Remove the tray from the oven and sprinkle parmesan cheese over the potatoes. Return them to the oven for a few minutes until the cheese melts.

Notes
