Make the Tartar Sauce
In a bowl, combine mayonnaise, minced pickle, chives, dried dill, salt, black pepper, and lemon juice.
Stir until smooth and well combined.
Refrigerate until ready to use.
Prepare the Coleslaw
In a mixing bowl, combine cabbage, carrot, chili pepper (if using), and green onion.
Add olive oil, vinegar, salt, pepper, and sugar.
Toss everything together until evenly coated.
Prepare the Fish Coating
Place flour on a plate and spread it evenly.
On a second plate, mix panko breadcrumbs, ¼ teaspoon salt, black pepper, onion powder, paprika, thyme, cayenne pepper, and garlic powder.
In a bowl, whisk the egg.
Coat the Fish
Pat the cod pieces dry using paper towels and sprinkle with the remaining salt.
Dredge the fish in flour and shake off excess.
Dip the fish into the beaten egg.
Coat completely in the seasoned panko breadcrumbs, pressing gently so they stick.
Fry the Fish
Pour vegetable oil into a heavy pot until it reaches about 2 inches deep.
Heat the oil to around 360°F (182°C).
Carefully place the coated fish into the hot oil.
Fry for about 3 minutes per side until golden brown and cooked through.
Remove from the oil and place on a cooling rack or paper towel-lined plate.
Assemble the Crispy Fried Fish Burgers
Toast the burger buns if desired.
Spread tartar sauce on both halves of each bun.
Place the crispy fried fish on the bottom bun.
Add coleslaw and any optional toppings such as lettuce, tomato, or pickles.
Close the burger with the top bun and serve immediately.
You can substitute cod with tilapia, haddock, or pollock.
