Preheat the oven to 425°F and line a baking sheet with parchment paper.
Pat the salmon pieces dry with paper towels.
In a large bowl, toss the salmon with olive oil.
Add garlic powder, paprika, onion powder, salt, black pepper, and cornstarch. Toss until the salmon is evenly coated.
Arrange the salmon pieces in a single layer on the prepared baking sheet.
Bake for 12–15 minutes, flipping halfway through, until the salmon becomes golden and crispy.
While the salmon cooks, prepare the sauce by whisking together mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
Remove the Crispy Bang Bang Salmon Bites from the oven and drizzle or toss them with the sauce.
Garnish with green onions and sesame seeds before serving.
