- 1½ pounds large shrimp peeled and deveined
- 3 garlic cloves minced
- 2 tablespoons olive oil
- 1 cup heavy cream
- ½ cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ½ cup grated parmesan cheese
- 1 cup spinach chopped
- ½ cup sun-dried tomatoes
Heat olive oil in a large skillet over medium-high heat. Add shrimp and minced garlic, cooking for 2–3 minutes per side until shrimp turn pink. Remove shrimp and set aside.
In the same skillet, add heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Whisk over medium-high heat until the sauce begins to thicken.
Stir in spinach and sun-dried tomatoes and simmer until the spinach wilts.
