- 1 tbsp extra-virgin olive oil
- 4 boneless skinless chicken breasts
- Kosher salt
- Freshly ground black pepper
- 1 tsp dried oregano
- 3 tbsp unsalted butter
- 3 garlic cloves minced
- 1 1/2 cups cherry tomatoes halved
- 3 cups baby spinach
- 1/2 cup heavy cream
- 1/2 oz Parmesan cheese finely grated
- Lemon wedges for serving
Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and oregano. Cook for about 8 minutes per side until golden and fully cooked. Remove and set aside.
In the same skillet, melt butter. Add garlic and sauté until fragrant, about 1 minute.
Add cherry tomatoes, season lightly, and cook until softened and slightly bursting, about 5 minutes.
Stir in spinach and cook until wilted.
Pour in cream and add Parmesan. Let the sauce simmer until slightly thickened.
Return chicken to the skillet and coat with the sauce. Simmer for 5–7 minutes until heated through.
Serve Creamy Tuscan Chicken with a squeeze of fresh lemon juice.
