Creamy Lemon Spinach Pasta

Ingredients
  

  • 8 ounces whole-wheat spaghetti
  • 1 9-ounce package baby spinach
  • 2 cups fresh basil leaves
  • 7 tablespoons extra-virgin olive oil
  • 2 teaspoons grated lemon zest
  • 1 tablespoon lemon juice
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1/4 cup chopped walnuts toasted
  • 1/8 teaspoon ground black pepper

Instructions
 

  • Bring a large pot of water to a boil and cook spaghetti according to package instructions.
  • Reserve 1/2 cup of pasta cooking water, then drain the spaghetti.
  • In a blender, combine spinach, basil, olive oil, lemon juice, garlic, and salt. Blend until smooth and vibrant green.
  • Return the cooked spaghetti to the pot and pour in the spinach sauce.
  • Toss well to coat, adding reserved pasta water gradually to reach your desired consistency.
  • Serve immediately and top with cheese, walnuts, pepper, and lemon zest.
