Ingredients
  

  • 1 lb Italian beef sausage
  • 2 cloves garlic minced
  • 1 can 15 oz diced tomatoes
  • 4 cups chicken broth
  • 1 package 16 oz gnocchi
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • Optional: fresh spinach or basil for garnish

Instructions
 

  • In a large pot over medium heat, brown the Italian beef sausage until fully cooked and crumbly.
  • Add minced garlic and cook for 30 seconds until fragrant.
  • Stir in diced tomatoes and chicken broth. Bring to a gentle boil.
  • Add the gnocchi and cook for 3–4 minutes, until they float to the surface.
  • Lower the heat and stir in the heavy cream. Simmer gently for 5 minutes until the soup thickens into a creamy Creamy Italian Sausage Gnocchi Soup.
