Cook the pasta
Boil pasta in salted water according to package instructions. Reserve 1/2 cup pasta water, then drain.
Prepare the chicken
Butterfly chicken breasts and pat dry. Season both sides with salt and pepper.
Cook the chicken
Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Cook chicken for 4–5 minutes per side until golden and fully cooked (165°F). Remove and set aside.
Make the garlic sauce
Lower heat to medium. Add remaining butter and garlic cloves. Sauté until golden and fragrant.
Add flavor base
Stir in rosemary and cook briefly. Pour in chicken broth and scrape the pan to release flavor.
Create the cream sauce
Add warmed cream and simmer for about 4 minutes until slightly thickened.
Combine everything
Slice the chicken and return it to the pan. Add pasta and toss gently.
Adjust consistency
Add reserved pasta water gradually until the sauce reaches your desired texture.
