Preheat the oven to 450°F (230°C).
Line two baking sheets with parchment paper.
Using a 2-inch round cookie cutter, cut approximately 42 circles from the pie crust dough.
Arrange the dough circles on the prepared baking sheets.
Brush each circle lightly with olive oil.
Season with kosher salt and freshly ground black pepper.
Prick each dough circle several times with a fork to prevent excessive puffing.
Bake for 5–7 minutes or until golden brown and lightly puffed.
While the crusts bake, cut the Brie into small 1-inch pieces.
Remove the baked crusts from the oven and allow them to cool slightly.
Top each crust round with a piece of Brie.
Add a small spoonful of cranberry sauce on top of the cheese.
Garnish with fresh thyme leaves.
Serve the Cranberry-Brie Pie Crust Bites warm or at room temperature.
