Cranberry Brie Pie Crust Bites

Cranberry-Brie Pie Crust Bites are flaky pastry rounds topped with creamy Brie, cranberry sauce, and fresh thyme.

Ingredients
  

  • 2 refrigerated pie crusts unrolled (14.1-ounce box)
  • 3 tablespoons extra-virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 12 ounces Brie cheese
  • ¼ cup prepared cranberry sauce
  • 5 sprigs fresh thyme

Instructions
 

  • Preheat the oven to 450°F (230°C).
  • Line two baking sheets with parchment paper.
  • Using a 2-inch round cookie cutter, cut approximately 42 circles from the pie crust dough.
  • Arrange the dough circles on the prepared baking sheets.
  • Brush each circle lightly with olive oil.
  • Season with kosher salt and freshly ground black pepper.
  • Prick each dough circle several times with a fork to prevent excessive puffing.
  • Bake for 5–7 minutes or until golden brown and lightly puffed.
  • While the crusts bake, cut the Brie into small 1-inch pieces.
  • Remove the baked crusts from the oven and allow them to cool slightly.
  • Top each crust round with a piece of Brie.
  • Add a small spoonful of cranberry sauce on top of the cheese.
  • Garnish with fresh thyme leaves.
  • Serve the Cranberry-Brie Pie Crust Bites warm or at room temperature.

  • Serve alongside a holiday charcuterie board.
  • These bites pair well with fresh fruit and mixed nuts.
  • For a festive presentation, garnish with additional thyme sprigs.
