Preheat the oven to 350°F (175°C). Lightly grease a large baking sheet or line it with parchment paper.
In a medium bowl, combine the softened cream cheese, finely chopped crab meat, and green onions until evenly mixed.
Separate the crescent roll dough into 16 triangles.
Arrange the triangles in a circle on the prepared baking sheet, positioning the short sides toward the center and allowing the pointed ends to face outward. The arrangement should resemble a sun.
Spoon the crab and cream cheese mixture evenly around the inner portion of the dough circle.
Bring each pointed end of dough over the filling toward the center. Tuck the tip underneath the inner edge of the dough to secure it.
Continue around the circle until the entire Crab and Cream Cheese Crescent Ring is formed.
Lightly brush the exposed crescent dough with egg white.
Bake for 25–30 minutes, or until the crescent dough is puffed and golden brown.
Allow the ring to cool for about 5 minutes before slicing and serving.
Notes
For a lighter variation, reduced-fat cream cheese can replace regular cream cheese. You can also add finely chopped parsley, dill, or a little lemon zest to brighten the crab cream cheese filling.
