Cinnamon Roll Pancakes

Cinnamon Roll Pancakes are fluffy buttermilk pancakes swirled with cinnamon sugar and topped with cream cheese glaze.

Ingredients
  

Cream Cheese Frosting

  • 4 tbsp unsalted butter
  • 2 oz cream cheese room temperature
  • 3/4 cup powdered sugar sifted
  • 1/2 tsp vanilla extract

Pancakes

  • 3 cups all-purpose flour
  • 3 tbsp sugar
  • 3 tsp baking powder
  • 1 1/2 tsp baking soda
  • 3/4 tsp salt
  • 3 cups buttermilk
  • 1/2 cup milk
  • 3 eggs
  • 1/3 cup butter melted
  • 1 tsp vanilla extract

Cinnamon Swirl

  • 2/3 cup packed brown sugar
  • 5 tbsp unsalted butter melted
  • 1 tbsp ground cinnamon

Instructions
 

Make the Cream Cheese Frosting

  • Melt the butter in a small saucepan over low heat.
  • Remove from the heat and whisk in the cream cheese until mostly smooth.
  • Add the powdered sugar and whisk until combined.
  • Stir in the vanilla extract.
  • Set aside while preparing the pancakes.

Prepare the Pancake Batter

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, combine the buttermilk, milk, eggs, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients.
  • Stir gently until just combined. A few lumps are perfectly fine.
  • Let the batter rest for 10 minutes.

Make the Cinnamon Swirl

  • In a small bowl, combine the melted butter, brown sugar, and cinnamon.
  • Mix until smooth.
  • Transfer the mixture to a zip-top bag.
  • Cut a small corner from the bag for piping.
  • Cook the Cinnamon Roll Pancakes
  • Heat a lightly greased skillet or electric griddle over medium heat.
  • Pour batter onto the griddle to form a 4-inch pancake.
  • When bubbles begin forming on the surface, pipe the cinnamon mixture in a spiral pattern starting from the center and working outward.

Cook for 2–3 minutes until bubbles begin to pop.

  • Carefully flip and cook for another 2–3 minutes until golden brown.
  • Wipe the pan if needed and repeat with remaining batter.
  • Drizzle warm cream cheese frosting over the finished Cinnamon Roll Pancakes before serving.

Notes

  • Serve with fresh berries for a refreshing contrast.
  • Add chopped pecans or walnuts for extra texture.
  • For a sweeter breakfast, drizzle additional glaze before serving.
  • Pair with coffee, tea, or cold milk.
