Preheat oven to 325°F (165°C). Line a 9x9-inch baking pan with parchment paper, allowing overhang for easy removal.
Mix graham cracker crumbs, melted butter, and sugar until combined. Press firmly into the bottom of the pan. Bake for 10 minutes and let cool.
Beat softened cream cheese and sugar until smooth and creamy. Add eggs (or applesauce) and vanilla extract. Mix until fully combined.
In a small bowl, stir together melted butter, brown sugar, and cinnamon.
Spread cheesecake mixture over the cooled crust. Drizzle cinnamon mixture on top and swirl gently with a knife.
Bake for 35–40 minutes, until edges are golden and center is set. Cool completely, then refrigerate at least 2 hours.
Whisk powdered sugar, milk, and vanilla until smooth. Drizzle glaze over chilled Cinnamon Roll Bliss Bars.
Lift from pan using parchment, slice into squares, and serve.
