Heat a large skillet over medium-low heat.
Add diced apple, corn syrup, honey, maple syrup, cinnamon, and brown sugar.
Cook for 8–10 minutes, stirring occasionally, until apples soften and become lightly caramelized. Transfer mixture to a bowl.
Place one tortilla in the same skillet over medium-low heat. Spread the apple mixture evenly over the tortilla.
Top with the second tortilla.
Cook for 1–3 minutes until the bottom tortilla is golden brown. Carefully flip and cook another 1–3 minutes until both sides are crisp and golden.
Remove from skillet, slice into wedges, and serve warm.
These Cinnamon Apple Quesadillas are best enjoyed fresh while the filling is warm and gooey.
