Heat a large skillet over medium-low heat. Add diced apple, corn syrup, honey, maple syrup, cinnamon, and brown sugar.
Cook for 8–10 minutes, stirring occasionally, until the apples are tender and lightly caramelized. Transfer the mixture to a bowl.
Place one tortilla in the same skillet over medium-low heat. Spread the apple mixture evenly over the tortilla.
Top with the remaining tortilla. Cook for 1–3 minutes until the bottom is golden brown.
Carefully flip and cook the other side for another 1–3 minutes until golden.
Remove from heat, slice, and serve warm. These Cinnamon Apple Quesadillas are best enjoyed fresh.
