Ingredients
  

Peanut Butter Oat Slice

  • cups rolled oats
  • 1 cup + 1 tablespoon smooth peanut butter
  • ½ cup maple syrup

Chocolate Topping

  • 1 cup vegan chocolate buttons or chocolate chips
  • 3 tablespoons smooth peanut butter

Instructions
 

For the Peanut Butter Oatmeal Bars

  • Line an 8x8-inch square baking pan with parchment paper.
  • Add the peanut butter and maple syrup to a medium saucepan.
  • Heat over medium heat, stirring until smooth and fully combined.
  • Add the rolled oats and mix until all oats are coated.
  • Remove from the heat.
  • Transfer the mixture to the prepared pan.
  • Press the mixture firmly into an even layer using a spatula or the back of a spoon.
  • Set aside while preparing the topping.

For the Chocolate Topping

  • Add the chocolate and peanut butter to a microwave-safe bowl or double boiler.
  • Melt gently, stirring until smooth and glossy.
  • Pour the melted chocolate mixture over the oat layer.
  • Spread evenly using a spatula.
  • Allow to cool slightly.
  • Refrigerate for at least 30 minutes or until fully set.
  • Slice into bars or squares and serve.

Notes

  • Certified gluten-free oats can be used for a gluten-free version.
  • Almond butter or cashew butter can replace peanut butter.
  • Honey may be substituted for maple syrup if vegan options are not required.
  • These bars travel well and are perfect for lunchboxes.
