Chocolate Peanut Butter Banana Bites Recipe

Chocolate Peanut Butter Banana Bites are an easy frozen dessert made with bananas, peanut butter, and dark chocolate.

Ingredients
  

  • 3 ripe bananas
  • 1/3 cup natural peanut butter
  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions
 

  • Peel the bananas and slice them into rounds approximately ¼-inch thick.
  • Line a baking sheet, tray, or large plate with parchment paper.
  • Spread about ½ teaspoon of peanut butter onto one banana slice.
  • Top with another banana slice to create a mini sandwich.
  • Repeat until all banana slices have been used.
  • Arrange the banana sandwiches on the prepared tray.
  • Freeze for at least 1 hour or until firm.
  • Add the dark chocolate chips and coconut oil to a microwave-safe bowl.
  • Microwave for 1 minute and stir.
  • Continue microwaving in 30-second intervals until fully melted and smooth.
  • Remove half of the frozen banana bites from the freezer.
  • Dip each bite halfway into the melted chocolate.
  • Return them to the parchment-lined tray.
  • Repeat with the remaining bites.
  • Freeze for another 15 minutes until the chocolate hardens.
  • Enjoy immediately or store in a freezer-safe container.

Notes

  • For a fully coated chocolate shell, double the chocolate chips.
  • Mini chocolate chips melt faster and more evenly.
  • Store in individual layers separated by parchment paper.
  • These make an excellent post-workout snack
