Peel the bananas and slice them into rounds approximately ¼-inch thick.
Line a baking sheet, tray, or large plate with parchment paper.
Spread about ½ teaspoon of peanut butter onto one banana slice.
Top with another banana slice to create a mini sandwich.
Repeat until all banana slices have been used.
Arrange the banana sandwiches on the prepared tray.
Freeze for at least 1 hour or until firm.
Add the dark chocolate chips and coconut oil to a microwave-safe bowl.
Microwave for 1 minute and stir.
Continue microwaving in 30-second intervals until fully melted and smooth.
Remove half of the frozen banana bites from the freezer.
Dip each bite halfway into the melted chocolate.
Return them to the parchment-lined tray.
Repeat with the remaining bites.
Freeze for another 15 minutes until the chocolate hardens.
Enjoy immediately or store in a freezer-safe container.
