Chocolate Peanut Butter Banana Bites

Chocolate Peanut Butter Banana Bites are frozen banana sandwiches with peanut butter.

Ingredients
  

  • 3 ripe bananas
  • 1/3 cup natural peanut butter
  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions
 

  • Peel and slice bananas into rounds about 1/4 inch thick.
  • Line a baking sheet with parchment paper.
  • Spread about 1/2 teaspoon peanut butter onto one banana slice and top with another slice to create a sandwich.
  • Repeat until all banana slices are used, forming about 30 bites.
  • Place the bites on the prepared sheet and freeze for 1 hour.
  • In a microwave-safe bowl, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.
  • Remove frozen bites and dip each one halfway into the melted chocolate.
  • Place coated bites back on the parchment-lined tray.
  • Freeze again for 15 minutes until chocolate is set.
  • Enjoy your Chocolate Peanut Butter Banana Bites immediately or store for later.

Notes

  • Fully coat bites in chocolate if you prefer a richer treat (use more chocolate).
  • Great for meal prep snacks or party desserts.
  • Can substitute almond butter or cashew butter.
