Ingredients

  • 3 ounces semi-sweet chocolate
  • 1/4 cup heavy cream
  • 3 tablespoons packed light brown sugar
  • 2 tablespoons vegetable oil
  • 2 tablespoons beaten egg
  • 1/2 teaspoon vanilla extract
  • 6 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda

Instructions

  • Preheat oven to 350°F (177°C). Lightly grease two ramekins and place on a baking sheet.
  • Chop 2 ounces of chocolate and melt with heavy cream in short microwave intervals, stirring until smooth.
  • Whisk in brown sugar until fully dissolved. Add oil, beaten egg, and vanilla extract. Mix well.
  • In another bowl, combine flour, baking powder, and baking soda.
  • Fold dry ingredients into wet mixture until smooth. This step ensures your chocolate fudge cakes for 2 have the perfect texture.
  • Divide batter evenly into ramekins (about 3/4 full).
  • Place a chunk of remaining chocolate in the center of each ramekin and submerge.
  • Bake for 15–17 minutes, rotating halfway through.
  • Serve immediately while warm and gooey.

Notes

  • Serve with vanilla ice cream or whipped cream
  • Add berries for a fresh contrast
  • Use dark chocolate for a more intense flavor
