- 1 brownie mix for an 8x8-inch baking dish
- 1 lb strawberries stems removed and cut in half
Chocolate Ganache
- 1½ cups semi-sweet chocolate chips or part dark chocolate
- ¾ cup heavy cream up to 1 cup if needed
Preheat oven and prepare the brownie mix according to package directions in an 8x8-inch baking dish.
Bake and allow brownies to cool completely.
Remove strawberry stems and slice them in half lengthwise.
Arrange strawberries in a single layer over the cooled brownies, cut side down for stability.
Prepare the Ganache
In a microwave-safe bowl, combine chocolate chips and heavy cream.
Microwave for 25 seconds, then stir slowly.
Microwave again for 20 seconds and stir thoroughly for at least 20 seconds.
If needed, heat in 15-second intervals, stirring between each, until smooth, dark, and glossy.
Finish
Pour the chocolate ganache evenly over the strawberries, covering them completely.
Refrigerate for 20–30 minutes until the ganache sets and firms up.
Slice and serve within 24 hours for best texture.
Chocolate Covered Strawberry Brownies are best enjoyed fresh, as strawberries naturally release moisture over time.
