Chocolate Chip Cookie Pie

Chocolate Chip Cookie Pie is a gooey cookie baked in a buttery pie crust.

Ingredients
  

  • 1 9-inch all-butter pie crust (homemade or store-bought)
  • 1/2 cup unsalted butter melted
  • 1/3 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups chocolate chips plus extra for topping

Instructions
 

  • Preheat oven to 425°F (220°C). Place the pie crust into a pie plate, crimp the edges, and refrigerate until ready to fill.
  • In a large bowl, stir together the melted butter, granulated sugar, and brown sugar until smooth.
  • Add the egg, vanilla extract, baking soda, and salt. Mix until fully combined.
  • Stir in the flour until a thick cookie dough forms.
  • Fold in the chocolate chips until evenly distributed.
  • Spread the cookie dough evenly into the prepared pie crust. Sprinkle additional chocolate chips over the top.
  • Cover the edges with a pie shield and place the pie on a baking sheet.
  • Bake at 425°F for 10 minutes, then reduce oven temperature to 350°F (175°C).
  • Continue baking for about 25 minutes, until the top is puffed, lightly golden, and no longer glossy.
  • Allow the Chocolate Chip Cookie Pie to cool to room temperature before slicing.

Notes

This Chocolate Chip Cookie Pie slices best once cooled, but it’s delicious slightly warm. Serve plain or dressed up with your favorite toppings.
