Chocolate Chip Cookie Cheesecake Bars

Ingredients
  

  • 1 18 oz roll refrigerated chocolate chip cookie dough
  • 8 oz cream cheese softened
  • ½ cup granulated sugar
  • 1 large egg at room temperature
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Line a 9-inch square baking dish with parchment paper or non-stick foil.
  • Press a little more than half of the cookie dough evenly into the bottom of the baking dish.
  • In a mixing bowl, beat the cream cheese until smooth and fluffy.
  • Add sugar and beat until fully combined.
  • Mix in the egg and vanilla extract until smooth.
  • Pour the cheesecake mixture evenly over the cookie dough base.
  • Crumble the remaining cookie dough over the top.
  • Bake for 30–35 minutes until set and lightly golden.
  • Allow bars to cool completely before slicing.

Notes

For extra indulgence, drizzle with chocolate sauce or serve with vanilla ice cream. These bars are rich, so small portions go a long way.
