Chicken Souvlaki Tray Bake

A Chicken Souvlaki Tray Bake is a Greek-inspired sheet pan meal with marinated chicken, potatoes, and vegetables.

Ingredients
  

Marinade

  • 60 ml extra-virgin olive oil
  • 1 tbsp minced garlic
  • 2 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 2 tsp dried oregano
  • 1 tsp sweet paprika
  • tsp sea salt flakes
  • ½ tsp black pepper

Chicken & Veggies

  • 600 g potatoes sliced into thin wedges
  • 1 red onion cut into wedges
  • 200 g capsicum bell peppers, sliced
  • 1 kg boneless skinless chicken thighs

To Serve

  • 100 g feta cheese
  • Fresh dill optional
  • Toasted pita bread
  • Tzatziki
  • Lemon wedges

Instructions
 

  • Preheat your oven to 220°C (425°F), or 200°C fan-forced.
  • In a bowl, mix all marinade ingredients until well combined.
  • Place potatoes, onion, and capsicum in a large baking tray. Add 1 tablespoon of marinade and toss well. Spread evenly.
  • Coat the chicken thoroughly with the remaining marinade.
  • Arrange the chicken on top of the vegetables in a single layer.
  • Roast in the oven for 28 minutes until the chicken is cooked through and potatoes are tender.
  • Switch to grill (broiler) for 2 minutes to crisp the edges.
  • Finish the Chicken Souvlaki Tray Bake with feta, herbs, olive oil, and black pepper.
  • Serve with pita bread, tzatziki, and lemon wedges.

Notes

  • You can substitute chicken breast if preferred (reduce cooking time slightly)
  • Serve over rice or salad for variation
  • Add olives for a more authentic Mediterranean touch
