Chicken Salad Melt Sandwich
A chicken salad melt sandwich is made with toasted buttered bread, creamy chicken salad, melted cheese, and fresh lettuce and tomato.

- 2 slices bread whole wheat or white
- 1/3 cup chicken salad
- 1/4 cup cheese grated
- 2 tablespoons butter melted
- 2 slices tomato
- 1 large leaf lettuce
Melt the butter completely.
Brush the melted butter onto one side of each slice of bread.
Heat a sauté pan over low heat.
Place both slices of bread in the pan, butter side down.
Evenly divide the grated cheese over both slices.
Cook until the bread is golden brown and the cheese is melted.
Remove from the pan.
Spread the chicken salad evenly on both slices.
Add lettuce and tomato on one slice over the chicken salad.
Top with the second slice to form your chicken salad melt sandwich.
Slice in half and serve warm.
You can swap lettuce with arugula or spinach for a different flavor.
Add sliced avocado or pickles for extra texture and taste.
