Preheat oven to 425°F (220°C).
Dice potatoes into ¾-inch cubes.
In a large bowl, toss potatoes with garlic, olive oil, salt, and pepper.
Spread the potato mixture in a greased 9×13 baking dish.
Bake for 15 minutes.
Remove from oven and place chicken pieces on top, nestling them into the potatoes.
Lightly brush chicken with olive oil and season with salt and pepper if desired.
Bake for 20–25 minutes until chicken is cooked through and potatoes are golden.
Sprinkle mozzarella cheese over the top and return to oven for a few minutes until melted.
Garnish with fresh parsley and serve warm.
