Chicken Potato Bake

Chicken Potato Bake is a simple oven dish with chicken, potatoes, and cheese.

Ingredients
  

  • 4 medium potatoes
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 pounds boneless skinless chicken breasts or thighs
  • 1 cup shredded mozzarella cheese
  • Fresh parsley optional

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Dice potatoes into ¾-inch cubes.
  • In a large bowl, toss potatoes with garlic, olive oil, salt, and pepper.
  • Spread the potato mixture in a greased 9×13 baking dish.
  • Bake for 15 minutes.
  • Remove from oven and place chicken pieces on top, nestling them into the potatoes.
  • Lightly brush chicken with olive oil and season with salt and pepper if desired.
  • Bake for 20–25 minutes until chicken is cooked through and potatoes are golden.
  • Sprinkle mozzarella cheese over the top and return to oven for a few minutes until melted.
  • Garnish with fresh parsley and serve warm.
  • This Chicken Potato Bake is ready to enjoy straight from the oven.
