For a slightly lighter easy creamy chicken soup, replace part of the heavy cream with additional chicken broth. The final consistency will be thinner but still flavorful.
Melt the butter in a large saucepan, soup pot, or Dutch oven over medium heat. Add the chopped onion, poblano pepper, and half of the seasoning blend.
Cook for 5–6 minutes, stirring occasionally, until the vegetables are tender and beginning to brown around the edges.
Add the shredded chicken, drained black beans, frozen corn, chicken broth, and remaining seasoning blend. Stir until everything is evenly combined.
Increase the heat to medium-high and bring the Chicken Poblano Soup to a gentle simmer. Reduce the heat as needed and simmer uncovered for 15 minutes.
Stir in the heavy cream and shredded cheese. Continue stirring over gentle heat until the cheese has completely melted into the broth.
Bring the soup back to a gentle simmer and cook uncovered for another 15 minutes, stirring occasionally.
Stir in the fresh lime juice. Taste and adjust the salt and black pepper as needed.
Ladle the hot soup into bowls and finish with chopped cilantro and your favorite toppings.
