Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
If using wooden skewers, soak them in water for at least 15 minutes.
In a food processor, combine onion, parsley, and garlic. Pulse until finely chopped.
Transfer the mixture to a large bowl and add breadcrumbs, ground chicken, coriander, allspice, cumin, cardamom, salt, and pepper.
Mix until evenly combined.
Divide the mixture and shape into elongated kofta around skewers.
Arrange on the prepared baking sheet.
Bake for 15–20 minutes or until the internal temperature reaches 165°F (74°C).
