Chicken Caesar Pasta Salad

Chicken Caesar Pasta Salad combines pasta, chicken, lettuce, and creamy Caesar dressing.

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup grated Parmesan cheese
  • Zest and juice of 1 large lemon
  • 3 garlic cloves minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon ground black pepper
  • 1 teaspoon Worcestershire sauce

For the Salad:

  • 8 oz fusilli pasta
  • 6 cups chopped romaine lettuce or kale
  • 3 cups cooked chopped chicken
  • 2 cups cherry tomatoes halved
  • 1 avocado diced (optional)
  • cup shaved Parmesan cheese
  • Optional toppings: roasted chickpeas pine nuts, pumpkin seeds, or croutons

Instructions
 

  • In a bowl, whisk together mayonnaise, Parmesan, lemon zest, lemon juice, garlic, Dijon mustard, black pepper, and Worcestershire sauce to make the dressing.
  • Cook pasta according to package instructions, then drain and let cool.
  • In a large bowl, combine pasta, lettuce, chicken, cherry tomatoes, and avocado.
  • Pour the dressing over the salad and toss gently until evenly coated.
  • Sprinkle shaved Parmesan on top and add optional toppings before serving.
  • This Chicken Caesar Pasta Salad is best served fresh but can also be chilled for later.

Notes

  • You can substitute Greek yogurt for part of the mayonnaise
  • Add boiled eggs for extra protein
  • Use whole wheat pasta for a healthier version
