Chicken Burrito Bowl Recipe

A chicken burrito bowl is a healthy one-bowl meal with rice, chicken, and fresh toppings.

Ingredients
  

For the chicken

  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 3 chipotle chilis in adobo sauce finely chopped
  • 1 ½ tablespoon adobo sauce
  • 1 ½ teaspoon garlic powder
  • ¾ teaspoon salt
  • 1 ½ pounds chicken breast cut into strips

For the cilantro lime rice

  • 1 cup long-grain white rice rinsed
  • 1 ½ cups water
  • ¼ teaspoon salt
  • 1 lime zested + 2 tablespoons juice
  • ¼ cup chopped cilantro

To assemble

  • 1 head romaine lettuce chopped
  • 1 cup tomatoes diced
  • 1 cup frozen corn thawed
  • 1 can 15 oz black beans, rinsed and drained
  • ½ small red onion chopped
  • Guacamole or diced avocado

Instructions
 

  • In a large bowl, mix olive oil, lime juice, chipotle chilies, adobo sauce, garlic powder, and salt. Add chicken and toss well to coat. Cover and marinate for at least 2 hours or overnight.
  • Heat a pan over medium-high heat. Remove chicken from marinade and cook for about 5 minutes, stirring until fully cooked. Set aside.
  • In a pot, bring water to a boil. Add rice and salt, reduce heat, cover, and simmer for 15–18 minutes until tender.
  • Fluff rice with a fork, then mix in lime zest, lime juice, cilantro, and extra salt if needed.
  • To assemble the chicken burrito bowl, layer rice and lettuce in a bowl. Top with chicken, tomatoes, corn, black beans, onion, and avocado or guacamole.

Notes

  • Replace chicken breast with chicken thighs for juicier texture
