In a large bowl, mix olive oil, lime juice, chipotle chilies, adobo sauce, garlic powder, and salt. Add chicken and toss well to coat. Cover and marinate for at least 2 hours or overnight.
Heat a pan over medium-high heat. Remove chicken from marinade and cook for about 5 minutes, stirring until fully cooked. Set aside.
In a pot, bring water to a boil. Add rice and salt, reduce heat, cover, and simmer for 15–18 minutes until tender.
Fluff rice with a fork, then mix in lime zest, lime juice, cilantro, and extra salt if needed.
To assemble the chicken burrito bowl, layer rice and lettuce in a bowl. Top with chicken, tomatoes, corn, black beans, onion, and avocado or guacamole.
