Chicken Avocado Lettuce Wraps are a healthy low-carb meal made with Cajun-seasoned chicken, creamy avocado, and smoky chipotle dressing.

Ingredients
  

  • 1 lb chicken tenders
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 2 ripe avocados diced
  • 12 lettuce hearts
  • Juice of one lemon divided

For the Dressing

  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 3 tablespoons chipotle sauce
  • Juice of 1/2 lime

Instructions
 

  • Season the chicken tenders with Cajun seasoning and salt, making sure they are evenly coated.
  • Heat a large skillet over medium-high heat and add the olive oil.
  • Add the chicken tenders and cook for about 3–4 minutes on one side. Turn the chicken and cook another 3–4 minutes until fully cooked.
  • Remove the chicken from the pan and allow it to cool slightly.
  • In a small bowl, prepare the dressing by combining mayonnaise, sour cream, chipotle sauce, and lime juice. Mix well until smooth.
  • Slice the cooked chicken into small bite-sized pieces.
  • Lay out the lettuce leaves on a plate.
  • Fill each lettuce leaf with the sliced chicken and diced avocado.
  • Drizzle the chipotle dressing over the top.
  • Finish with a squeeze of fresh lemon juice and serve immediately. These Chicken Avocado Lettuce Wraps are best enjoyed fresh.

Notes

These wraps are very flexible. You can substitute grilled chicken breast or rotisserie chicken if you want to save time.
