Prepare the ingredients
Dice the potatoes into evenly sized cubes so they cook evenly. Slice the smoked sausage into half-inch rounds.
Cook the potatoes
Heat olive oil in a large skillet over medium heat. Add the diced potatoes and season lightly with salt and black pepper.
Cook for 12–15 minutes, stirring occasionally, until the potatoes become golden brown and tender. If they start sticking, add a splash of water and cover the pan briefly to help soften them.
Add sausage and vegetables
Stir in the sliced sausage, diced onion, and minced garlic. Cook for another 5–7 minutes until the sausage begins to brown and the onions become soft.
Sprinkle the ranch seasoning evenly over the skillet mixture and stir well so everything is coated.
Add the cheese
Reduce the heat to medium-low. Stir in the shredded cheddar cheese. If you prefer a creamier texture, pour in the milk or cream at this stage.
Allow the cheese to melt and coat the potatoes and sausage.
Serve
