Ingredients

  • 1 lb beef smoked sausage sliced into coins
  • 2 lbs potatoes diced into bite-size cubes
  • 1 packet ranch seasoning mix or 3 tbsp homemade ranch seasoning
  • 2 cups shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 1/4 cup milk or cream optional
  • Salt and black pepper to taste
  • Chopped parsley for garnish

Instructions

  • Prepare the ingredients
  • Dice the potatoes into evenly sized cubes so they cook evenly. Slice the smoked sausage into half-inch rounds.
  • Cook the potatoes
  • Heat olive oil in a large skillet over medium heat. Add the diced potatoes and season lightly with salt and black pepper.
  • Cook for 12–15 minutes, stirring occasionally, until the potatoes become golden brown and tender. If they start sticking, add a splash of water and cover the pan briefly to help soften them.
  • Add sausage and vegetables
  • Stir in the sliced sausage, diced onion, and minced garlic. Cook for another 5–7 minutes until the sausage begins to brown and the onions become soft.
  • Sprinkle the ranch seasoning evenly over the skillet mixture and stir well so everything is coated.
  • Add the cheese
  • Reduce the heat to medium-low. Stir in the shredded cheddar cheese. If you prefer a creamier texture, pour in the milk or cream at this stage.
  • Allow the cheese to melt and coat the potatoes and sausage.
  • Serve
  • Remove from heat and garnish with chopped parsley. Serve the Cheesy Ranch Potatoes and Smoked Sausage hot as a comforting main dish or a hearty side.

Notes
