In a bowl, combine the chopped chicken, minced garlic, mayonnaise, Greek yogurt, hot sauce, and salt. Mix well until the chicken is evenly coated.
Lay a tortilla flat on a clean surface. On the lower third of the tortilla, sprinkle about 2 tablespoons of grated cheese.
Add about ⅔ cup of the chicken mixture on top of the cheese.
Sprinkle another tablespoon of cheese over the chicken mixture and add a small amount of chopped green onion.
Fold the sides of the tortilla inward, then roll the tortilla tightly from the bottom to form a wrap.
Heat a non-stick skillet over medium-high heat and lightly spray with olive oil.
Place the wraps seam-side down in the skillet. Cook for about 3–4 minutes per side until golden brown and crispy.
Cover the pan with a lid briefly while cooking to help warm the filling and melt the cheese.
Remove from the pan, slice in half, and serve warm. These Cheesy Garlic Chicken Wraps are best enjoyed fresh while the cheese is melted and the tortilla is crispy.
