In a mixing bowl, combine chopped chicken, minced garlic, mayonnaise, Greek yogurt, hot sauce, and salt. Mix until creamy and well combined.
Lay a tortilla flat on a clean surface. On the lower third, sprinkle about 2 tablespoons of grated cheese.
Add about ⅔ cup of the chicken mixture over the cheese. Top with another tablespoon of cheese and sprinkle chopped green onion.
Fold in the sides of the tortilla, then roll tightly from the bottom to form a wrap.
Heat a non-stick pan over medium-high heat and lightly spray with olive oil.
Place the wraps seam-side down in the pan. Cook for 3–4 minutes per side until golden brown and crispy. Cover with a lid while cooking to help the inside heat through and melt the cheese.
Slice in half and serve immediately while warm and melty.
