Cheesy Chicken and Rice Casserole Recipe

Cheesy Chicken and Rice Casserole is a creamy baked dish made with tender chicken, rice, vegetables, and melted cheese.

Ingredients
  

  • cups low sodium chicken broth
  • 1 lb boneless skinless chicken breasts cut into ½–¾ inch cubes
  • 2 cups frozen vegetables
  • cups long grain white rice rinsed well
  • 1 cup heavy whipping cream
  • 2 teaspoons seasoning salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • 2 tablespoons butter cut into small pieces
  • 2 cups shredded cheddar or marble cheese

Instructions
 

  • Preheat the oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish.
  • Rinse the rice thoroughly in a fine mesh strainer until the water runs clear.
  • Add the chicken broth, cubed chicken, frozen vegetables, rinsed rice, heavy cream, seasoning salt, Italian seasoning, onion powder, and black pepper to the baking dish.
  • Stir everything together until well combined.
  • Scatter the small pieces of butter evenly over the top of the mixture.
  • Cover the dish tightly with aluminum foil.
  • Bake the Cheesy Chicken and Rice Casserole for 40–50 minutes until the rice becomes tender and the chicken is fully cooked.
  • Remove the foil, sprinkle shredded cheese evenly over the casserole, and return to the oven for about 5 minutes until the cheese melts.
  • Serve warm and enjoy.

Notes

You can customize this casserole with different vegetables such as broccoli, corn, peas, or green beans. Brown rice can be used, but it will require additional cooking time and extra broth.
