Cheap Nutritious Breakfast Toast
A cheap nutritious breakfast made with mashed avocado and white beans on toast.

- 1/3 cup canned white beans drained and rinsed
- 1/2 ripe avocado pitted and peeled
- Fresh lemon juice to taste
- Salt to taste
- 2 small slices bread of your choice toasted
- Cherry tomatoes optional
- Everything bagel seasoning optional
In a small bowl, combine the white beans and avocado.
Mash with a fork until mostly smooth but slightly chunky.
Add lemon juice and salt to taste, mixing well.
Toast the bread slices until golden and crisp.
Spread the avocado-bean mixture evenly over the toast.
Top with cherry tomatoes and everything bagel seasoning if desired.
Serve immediately and enjoy your cheap nutritious breakfast.
