Cajun Chicken with Bell Peppers

Ingredients
  

For the Cajun Chicken

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Vegetables

  • 2 bell peppers red, green, or yellow, sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
  • 1 tablespoon olive oil

For Garnish

  • Fresh parsley or cilantro chopped (optional)

Instructions
 

  • In a small bowl, mix Cajun seasoning, garlic powder, onion powder, paprika, thyme, salt, and pepper. Coat the chicken breasts evenly.
  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Cook chicken for 6–7 minutes per side until golden brown and fully cooked. Remove and set aside.
  • In the same skillet, add remaining olive oil. Sauté bell peppers and onion for 5–6 minutes until softened. Add garlic and cook 1–2 minutes.
  • Slice chicken and return it to the skillet. Toss everything together and cook for 2–3 minutes until heated through.
  • Serve hot, garnished with parsley or cilantro. This Cajun Chicken with Bell Peppers is ready to enjoy.

  • Serve over rice, quinoa, or cauliflower rice
  • Works great in wraps, tacos, or grain bowls
  • Add mushrooms or zucchini for extra vegetables
