Buffalo Chicken Flatbreads

Buffalo Chicken Flatbreads are topped with shredded chicken, buffalo sauce, cream cheese, and mozzarella.

Ingredients
  

  • 1 cup cooked chicken shredded (about 4 chicken tenders)
  • 1 whole wheat flatbread naan, tortilla, pizza crust, or pita bread
  • 3 tablespoons buffalo sauce divided
  • 4 oz cream cheese ½ block, softened
  • 1/3 cup mozzarella cheese
  • 5 –6 mini bell peppers thinly sliced
  • Ranch dressing for drizzling
  • 1 tablespoon sliced green onions

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Bring a pot of water to a gentle boil. Add chicken tenders and simmer 5–6 minutes or until internal temperature reaches 165°F (75°C). Remove and shred with two forks.
  • In a bowl, mix shredded chicken with 2 tablespoons buffalo sauce. Adjust heat to taste.
  • In a separate bowl, combine cream cheese with remaining 1 tablespoon buffalo sauce until smooth.
  • Place flatbread on a baking sheet. Spread evenly with buffalo cream cheese mixture.
  • Top with buffalo chicken, mozzarella cheese, and sliced mini bell peppers.
  • Bake for 7–9 minutes until heated through and cheese is melted.
  • Optional: Broil for 2–3 minutes for a golden top. Watch carefully.
  • Remove from oven, drizzle with ranch dressing, sprinkle green onions, slice, and serve.

Notes

• Whole wheat flatbread adds extra fiber.
