Ingredients
  

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a mini muffin pan.
  • In a bowl, mix the flour, sugar, baking powder, and salt.
  • In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  • Gently combine the wet and dry ingredients until just mixed.
  • Scoop the batter into the muffin pan, filling each cup about two-thirds full.
  • Bake for 10–12 minutes until the pancake poppers are puffed and lightly golden.
  • Cool slightly and serve warm with maple syrup or your favorite toppings.

Notes

These pancake poppers are great for lunchboxes or grab-and-go breakfasts. Adjust sweetness by adding more or less sugar as desired.
