Instructions
Preheat the oven to 375°F (190°C) and grease a mini muffin pan.
In a bowl, mix the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
Gently combine the wet and dry ingredients until just mixed.
Scoop the batter into the muffin pan, filling each cup about two-thirds full.
Bake for 10–12 minutes until the pancake poppers are puffed and lightly golden.
Cool slightly and serve warm with maple syrup or your favorite toppings.
Notes
These pancake poppers are great for lunchboxes or grab-and-go breakfasts. Adjust sweetness by adding more or less sugar as desired.
