This Breakfast Club Sandwich is packed with meat sausage patties, scrambled eggs, turkey bacon, cheddar cheese, and creamy avocado. Layered between toasted bread with cowboy butter, it's the ultimate hearty morning sandwich.

1 pound ground meat sausage (beef, chicken, or turkey)4 slices mild cheddar cheese1 tablespoon unsalted butter8 large eggs, beaten½ teaspoon kosher salt¼ teaspoon black pepper12 slices white bread, toasted1 large avocado, pitted, peeled, and sliced¾ cup cowboy butter, softened and dividedAdditional cooked meat slices (optional, e.g. grilled beef, turkey strips, or sausage slices)
Cook the MeatDivide ground meat into 4 equal patties, slightly larger than your bread slices. Cook in a skillet over medium heat for 3–4 minutes per side until fully cooked (160°F internal temperature for beef or turkey). In the final minute of cooking, top each patty with a slice of cheddar cheese and let it melt. Set aside on a paper towel-lined plate.EggsIn the same skillet, melt butter over medium heat. Add beaten eggs, salt, and pepper. Stir occasionally, pulling eggs across the pan to form soft curds. Cook until thickened and no liquid egg remains. Set aside.AssemblySpread 1 tablespoon cowboy butter on one side of each slice of toasted bread. Layer as follows: bread (buttered side in), cheesy meat patty, another slice of toast, additional cooked meat (if using), avocado slices, scrambled eggs, and final toasted slice. Cut into triangles and secure with toothpicks. Repeat for remaining sandwiches.
