Breakfast Bagel with Egg and Avocado

A breakfast bagel made with egg, avocado, cheese, and pickled onions.

Ingredients
  

  • 1 bagel of choice
  • 1 large egg
  • ¼ avocado
  • 1 –2 tablespoons pickled onions
  • 1 –2 slices emmental cheese
  • Pinch of za’atar
  • Spicy mayo hot sauce, or sriracha aioli
  • 1 teaspoon olive oil or butter
  • Salt and black pepper

Instructions
 

  • Slice the bagel in half and toast lightly using a toaster, skillet, or air fryer.
  • Slice the avocado and spread it evenly on the bottom half of the bagel.
  • Heat olive oil in a small skillet over medium heat.
  • Crack the egg into the pan, keeping the yolk intact.
  • Season with salt, black pepper, and a pinch of za’atar.
  • Cover the pan and cook until the egg white is set but the yolk remains runny.
  • Place the cooked egg on top of the avocado.
  • Add the cheese slices so they gently melt over the warm egg.
  • Top with pickled onions and drizzle your favorite sauce.
  • Close the bagel, slice, and serve immediately. This breakfast bagel is best enjoyed warm.

Notes

  • You can add fresh greens like arugula or spinach.
  • For a spicy kick, increase the hot sauce or use chili flakes.
  • Swap pickled onions with fresh tomatoes if preferred.
