Blueberry Swirl Yogurt

Blueberry Swirl Yogurt is made by simmering fresh blueberries with lemon juice and sweetener.

Ingredients
  

  • 2 cups fresh blueberries
  • 1 –2 teaspoons fresh lemon juice
  • 1 –2 tablespoons sugar honey, or preferred natural sweetener
  • 2 tablespoons water

Instructions
 

  • In a small saucepan, combine the blueberries, water, and fresh lemon juice.
  • Place the saucepan over medium-high heat and bring the mixture to a gentle simmer.
  • Cook while stirring occasionally until the berries begin to burst and release their juices.
  • Taste the mixture and decide if additional sweetness is needed.
  • Add sugar, honey, or your preferred natural sweetener if desired.
  • Continue simmering until most of the liquid has reduced and the mixture thickens into a syrupy consistency.
  • Remove from heat and allow the mixture to cool completely.
  • Spoon the blueberry mixture over yogurt and gently swirl to create a beautiful Blueberry Swirl Yogurt.
  • Store the remaining blueberry topping in a mason jar or airtight container.

Notes

This blueberry mixture pairs beautifully with Greek yogurt, vanilla yogurt, or plant-based yogurt.
