Blueberry Muffins

Blueberry Muffins are soft and fluffy with juicy berries.

Ingredients
  

Muffins:

  • 1 ½ cups all-purpose flour
  • ¾ cup white sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • cup vegetable oil
  • 1 large egg
  • cup milk
  • 1 cup fresh blueberries

Crumb Topping:

  • ½ cup white sugar
  • cup all-purpose flour
  • ¼ cup butter cubed
  • 1 ½ teaspoons ground cinnamon

Instructions
 

  • Preheat oven to 400°F (200°C) and line or grease 8 muffin cups.
  • In a large bowl, whisk flour, sugar, baking powder, and salt.
  • In a separate measuring cup, combine oil, egg, and milk until smooth.
  • Pour wet ingredients into dry ingredients and mix until just combined.
  • Gently fold in blueberries.
  • In a small bowl, mix sugar, flour, butter, and cinnamon until crumbly.
  • Fill muffin cups to the top with batter.
  • Sprinkle crumb topping generously over each muffin.
  • Bake Blueberry Muffins for 20–25 minutes until golden and a toothpick comes out clean.
  • Let cool slightly before serving.

Notes

  • Use frozen blueberries if fresh are unavailable (do not thaw).
  • Double the recipe for larger batches.
  • Best served warm with butter.
