Blueberry Biscuits

Blueberry Biscuits made with lemon zest and fresh berries.

Ingredients
  

  • 4 tablespoons sugar
  • 1 tablespoon lemon zest
  • 3 cups all-purpose flour
  • 5 teaspoons baking powder
  • 1 teaspoon salt
  • 6 tablespoons cold butter cut into small pieces
  • 1 1/4 cup buttermilk
  • 1 egg
  • 1 1/2 cups blueberries fresh or frozen, if frozen do not thaw

Instructions
 

  • Preheat oven to 220°C (450°F). Line a baking sheet with parchment paper.
  • In a small bowl, rub lemon zest into the sugar using your fingers until fragrant.
  • In a large bowl, combine flour, lemon sugar, baking powder, and salt.
  • Add cold butter pieces and rub into the flour mixture using your hands or a pastry cutter until crumbly.
  • In a separate bowl, whisk together buttermilk and egg.
  • Pour wet mixture into dry ingredients and stir gently with a fork until just combined.
  • Carefully fold in blueberries without crushing them.
  • Transfer dough onto a heavily floured surface and gently roll into a circle or rectangle.
  • Cut into biscuits using a cutter or knife.
  • Place on prepared baking sheet and bake for 10–15 minutes until golden brown.
  • These Blueberry Biscuits are best enjoyed warm from the oven.

Notes

  • Add a light lemon glaze for extra sweetness.
