Bing Cherry Amaretti Fool Recipe

A creamy Bing Cherry Amaretti Fool made with fresh cherries, whipped cream, and crunchy amaretti cookies.

Ingredients
  

  • 1 envelope unflavored gelatin
  • 1/3 cup cold water
  • 1 cup sour cream
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 2 cups coarsely chopped fresh Bing cherries divided
  • 1 cup heavy whipping cream
  • 1 cup coarsely crushed amaretti cookies about 16 cookies
  • Optional Toppings:
  • Fresh mint leaves
  • Fresh Bing cherries
  • Additional crushed amaretti cookies

Instructions
 

  • In a small saucepan, sprinkle the gelatin over the cold water. Let it stand for 1 minute.
  • Heat over low heat, stirring constantly until the gelatin completely dissolves.
  • Remove from heat and allow the mixture to cool for 5 minutes.
  • Place the sour cream, sugar, lemon juice, almond extract, vanilla extract, 1 cup chopped cherries, and the gelatin mixture into a blender.
  • Blend until smooth and the cherries are fully pureed.
  • Transfer the mixture to a large mixing bowl.
  • In a separate bowl, whip the heavy cream until soft peaks form.
  • Reserve 1/2 cup whipped cream for serving.
  • Gently fold the remaining whipped cream into the cherry mixture.
  • Fold in the crushed amaretti cookies and the remaining chopped cherries.
  • Divide the Bing Cherry Amaretti Fool Recipe mixture evenly among 8 dessert dishes or glasses.
  • Refrigerate for at least 2 hours or until set.
  • Top with the reserved whipped cream and optional garnishes before serving.
