Bean and Rice Burritos

Bean and Rice Burritos are made with seasoned rice, black beans, and fresh toppings.

Ingredients
  

  • 1 cup brown rice uncooked
  • 1 lime juiced
  • 1/2 cup fresh cilantro chopped
  • 1 15-ounce can black beans, drained
  • 1/4 cup water
  • 1/2 yellow onion chopped
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon taco seasoning
  • 4 tortillas
  • 1/2 cup salsa
  • 1 avocado diced

Instructions
 

  • Cook brown rice according to package instructions.
  • Fluff the rice with a fork, then mix in lime juice and chopped cilantro.
  • In a skillet, heat olive oil over medium heat.
  • Add chopped onion and sauté for about 5 minutes until soft.
  • Stir in black beans, water, and taco seasoning. Cook for 5 minutes.
  • Warm the tortillas slightly.
  • Spoon rice and bean mixture onto each tortilla.
  • Add salsa and diced avocado.
  • Fold and wrap into burritos.
  • These Bean and Rice Burritos are ready to enjoy fresh and warm.
