Preheat the oven to 350°F (175°C).
Scrub the russet potatoes thoroughly, rinse, and pat them dry.
Use a fork to poke several holes in each potato.
Rub each potato lightly with olive oil and sprinkle generously with kosher salt.
Arrange the potatoes on a baking sheet.
Bake for about 60–70 minutes, or until the potatoes are fork-tender with crispy skins.
While the potatoes are baking, place the chopped cooked chicken in a medium saucepan.
Pour the barbecue sauce over the chicken and stir gently until evenly coated.
Warm the chicken mixture over low heat for 8–10 minutes, stirring occasionally. Add extra barbecue sauce if you prefer a saucier filling.
Remove the baked potatoes from the oven and carefully slice each one lengthwise.
Fluff the inside of each potato with a fork.
Spoon the warm BBQ Chicken Stuffed Baked Potatoes filling generously into each potato.
Top with shredded cheddar cheese, sour cream, chopped chives, or your favorite toppings.
Serve immediately while hot.
