Ingredients

Chicken

  • 1 large boneless skinless chicken breast about 300 g, cut into small bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon sweet paprika
  • ½ teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon sea salt flakes
  • ½ teaspoon freshly cracked black pepper

Flatbreads

  • 4 flatbreads
  • ¼ cup BBQ sauce
  • 1 cup shredded mozzarella cheese
  • 1 small red onion finely sliced
  • 1 small bell pepper finely sliced
  • 1 tablespoon freshly chopped coriander optional

Instructions

Marinate the chicken

  • Place the chicken pieces in a medium bowl. Add olive oil, sweet paprika, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until the chicken is evenly coated.

Cook the chicken

  • Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for about 6 minutes, stirring occasionally, until the chicken is browned and fully cooked. Remove from heat and set aside.

Prepare the flatbreads

  • Preheat the oven to 400°F (200°C). Line a baking tray with parchment paper. Place the flatbreads on the tray.

Add the sauce

  • Spread a thin layer of BBQ sauce evenly over each flatbread.

Add toppings

  • Sprinkle shredded mozzarella cheese over the flatbreads. Top with cooked chicken, sliced red onion, and bell pepper.

Bake

  • Bake the BBQ Chicken Flatbreads for 8–10 minutes, or until the cheese melts and the edges become golden and crispy.

Serve

  • Remove from the oven and sprinkle with chopped coriander if desired. Serve immediately.

Notes

You can substitute mozzarella with cheddar, Monterey Jack, or a pizza cheese blend. Whole wheat flatbread or naan can also be used for a healthier option.
