Ingredients
  

  • 2 medium ripe bananas
  • ¼ cup all-purpose flour
  • 1 large egg
  • ¼ teaspoon ground cinnamon
  • teaspoon vanilla extract
  • ½ teaspoon baking powder
  • Butter or oil for greasing the pan

Instructions
 

  • Preheat a nonstick skillet or griddle over medium-low heat. Lightly grease it with butter or oil.
  • Peel one banana and place it into a blender along with the egg, ground cinnamon, vanilla extract, and baking powder.
  • Blend until the mixture is completely smooth and creamy.
  • Pour the blended mixture into a mixing bowl.
  • Add the all-purpose flour and whisk until a smooth batter forms without lumps.
  • Slice the remaining banana into thin, even coins.
  • Dip each banana slice into the batter, ensuring it is fully coated on all sides.
  • Carefully place the coated banana slices onto the preheated skillet.
  • Cook for about 2 to 3 minutes, or until bubbles begin to appear on the surface.
  • Flip each pancake bite and cook for another 2 minutes until both sides are lightly golden and fully cooked.
  • Remove the Banana Pancake Bites from the skillet and serve warm with your favorite toppings.

Notes

  • Whole wheat flour can replace all-purpose flour for extra fiber.
  • Gluten-free flour blend works well as a substitute.
  • Add a pinch of nutmeg for additional warmth.
