Preheat the oven to 350°F (175°C) and line a muffin tray with paper liners.
Add oats to a blender and blend until a fine flour forms.
Add cinnamon, baking powder, and salt to the blender and blend again to combine.
In a large bowl, mash bananas until smooth.
Add eggs, avocado oil, and vanilla extract, mixing well.
Stir the dry oat mixture into the wet mixture until fully combined.
Fold in chocolate chips if using.
Divide the batter evenly into the muffin tray.
Bake for 18–22 minutes, until a thermometer reads 190°F in the center.
