In a medium pot, combine oats, cinnamon, vanilla, sea salt, and half of the banana slices.
Add water and stir well.
Cook over medium-high heat for 8–10 minutes, stirring occasionally until oats are thick and creamy.
In a skillet, heat coconut oil and maple syrup over medium heat.
Add remaining banana slices and walnuts.
Cook bananas for about 2 minutes per side until golden and caramelized.
Remove from heat.
Serve oatmeal in a bowl and top with caramelized bananas and walnuts.
Drizzle with extra maple syrup if desired.
