Banana Bread Oatmeal

Banana bread oatmeal ready in 15 minutes

Ingredients
  

  • ½ cup old fashioned rolled oats
  • 1 cup water
  • ½ teaspoon cinnamon
  • ½ teaspoon vanilla
  • Pinch of sea salt
  • 1 banana sliced (divided)
  • 1 tablespoon chopped walnuts
  • 2 teaspoons coconut oil
  • 2 teaspoons maple syrup

Instructions
 

  • In a medium pot, combine oats, cinnamon, vanilla, sea salt, and half of the banana slices.
  • Add water and stir well.
  • Cook over medium-high heat for 8–10 minutes, stirring occasionally until oats are thick and creamy.
  • In a skillet, heat coconut oil and maple syrup over medium heat.
  • Add remaining banana slices and walnuts.
  • Cook bananas for about 2 minutes per side until golden and caramelized.
  • Remove from heat.
  • Serve oatmeal in a bowl and top with caramelized bananas and walnuts.
  • Drizzle with extra maple syrup if desired.
  • This Banana Bread Oatmeal is best served warm and fresh.

Notes

  • Substitute almonds or pecans for walnuts
