Baked Salmon with Spinach and Mozzarella Bliss

- For the Salmon
- 2 salmon fillets
- Salt to taste
- Black pepper to taste
- For the Spinach Mixture
- 300 g spinach thawed and well drained
- 1 onion thinly sliced
- 2 garlic cloves minced
- 200 g sour cream
- For the Topping
- 150 g mozzarella shredded
- 1 tbsp olive oil
Heat olive oil in a skillet over medium heat. Sauté the sliced onion for 3–4 minutes until translucent. Add garlic and cook for 30 seconds until fragrant.
Add spinach and cook 2–3 minutes until heated through and moisture evaporates. Season with salt and pepper, remove from heat, then stir in sour cream until creamy.
Preheat oven to 175°C (347°F). Season salmon fillets with salt and pepper and lightly sear each side for 2 minutes.
Place salmon in a greased baking dish. Spread the spinach mixture evenly over the top, then cover with mozzarella.
Bake Baked Salmon with Spinach and Mozzarella for 15–20 minutes until the salmon flakes easily and cheese is bubbly and lightly golden. Rest briefly before serving.
Serve with roasted potatoes, rice, or crusty bread. A squeeze of lemon before serving brightens the flavors beautifully.
